Pesto A La Hungry Girl

I have not been cooking lately because it is TOO hot.  Seriously.  I have a very  narrow range of comfort between 60 - 70 degrees.  Any other temperature then that and i am most likely whining about being too hot or too cold.  That being said I made some Hungry girl Pesto "sauce" the other day.  I put sauce in quotations because it is more like a paste.  So far I have used it in chicken salad and on sandwiches as a spread and tonight I will be putting it on our BLT dinner.  I haven't tried it on pasta yet.  I'm not sure how well it would work.  Maybe if it was heated up.  Anyways.  You can find the recipe here.


This recipe required no cooking, just a quick chop and a whirl in the food processor (or blender).  The only alteration I made was the use of walnuts instead of pine nuts.  Pine nuts were 8 bucks for a tiny bag.  Walnuts were 3. 

Here are some (really crappy) pictures of the steps.  I don't know what was wrong with my picture taking skills this day.

The Ingredients (I forgot the nuts)

Chop some garlic ( I hate garlic so I only used a little)

Put everything in the food processor
Basil, Garlic, Ricotta, Salt, Pepper, Olive Oil and Walnuts

Blend until pretty, spread on top of things you spread stuff on.
